Propaganda's Rossini is the summer variation of the great Venetian classic: well-chilled Prosecco poured slowly over a fresh strawberry puree, ripened to perfection, strained and balanced. A cocktail of disarming simplicity that speaks to the quality of the fruit, meeting the crisp effervescence of Prosecco.

Fresh strawberry puree5 cl

For the strawberry puree

Fresh ripe strawberriesto taste
Sugar syrupoptional
Lemon juiceoptional

Method

Preparing the strawberry puree

Wash and hull the fresh strawberries. Blend until smooth and homogeneous. Pass through a fine-mesh sieve to remove the seeds. If needed, add a few drops of lemon juice to balance the sweetness, or a little sugar syrup if the strawberries are not sweet enough. The puree keeps in the refrigerator for up to 24 hours.

Pour the 5 cl of strawberry puree into the base of a well-chilled Champagne flute or Prosecco glass.

Slowly add the 10 cl of well-chilled Prosecco, tilting the glass slightly as you pour to preserve the bubbles.

Stir very gently with a bar spoon using a single upward movement from the bottom to combine without dispersing the effervescence.
