Propaganda's Bellini is a faithful reinterpretation of the great classic born at Harry's Bar in Venice: well-chilled Prosecco poured slowly over a fresh peach puree, here made with tabacchiera peaches instead of the traditional white peach. Sweeter, more aromatic and with less watery flesh, the tabacchiera peaches yield a concentrated puree that blends with the bubbles in a delicate balance between the fruit's sweetness and the wine's freshness. An aperitif that is simple in technique but demanding in the precision of the gesture.

Method

Cleaning and blending the peaches
Wash, peel and stone the tabacchiera peaches. Blend immediately, adding a few drops of lemon juice to preserve the colour and slow oxidation.

Straining the puree
Pass the puree through a fine-mesh sieve for a smooth, silky consistency. Taste and adjust with a touch of sugar syrup if needed. The puree keeps in the refrigerator for 12-24 hours.

Pouring the puree into the glass
Pour the 5 cl of tabacchiera peach puree into the base of a well-chilled Champagne flute or Prosecco glass.

Adding the Prosecco and finishing
Slowly add the 10 cl of well-chilled Prosecco, tilting the glass slightly as you pour to preserve the bubbles. Stir very gently with a bar spoon, a single upward movement from the bottom, and serve immediately.
